Ingredients for 4 servings:

  • 3 stalk(s) leeks, medium-sized
  • 50 g oat flakes
  • 1 tbsp butter
  • 1 liter of broth
  • 125 ml cream
  • Paprika powder
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

After thoroughly washing the leeks, cut them into fine strips and roast them in butter with the oats. Deglaze with the broth and simmer for another 10 minutes. While cold, stir in the cream, paprika, and salt, and season the soup to taste. Note: Leek soup is not only suitable as a starter (e.g., with fish dishes); it also makes a perfect evening meal if you serve it with white bread and butter, perhaps melting one or two wedges of processed cheese (from the cream preparation) into the hot soup and adding some diced, cooked ham.
