Cucumber and Potato Soup with Meatballs (from Oven)

Ingredients
 

  • 2 Fresh cucumber
  • 500 g Mixed minced meat
  • 1 Onion
  • 1 kg Young potatoes
  • 3 tbsp Vegetable paste
  • Fresh dill
  • 4 tbsp Creme fraiche Cheese
  • Salt and pepper

Instructions
 

  • Season the minced meat with salt and pepper. Add the finely chopped onion and mix everything well. Shape it into meatballs the size of a walnut. Put these in the refrigerator. Now peel and halve the potatoes. Peel the cucumbers and remove the stones with the help of a spoon. Cut the cucumbers in 2 cm. cut thick columns. Layer the potatoes and cucumber in a baking dish. Now distribute the meatballs over it. Dissolve the vegetable paste in approx. 250 ml of hot water and pour over the dish. Now distribute the dill evenly over it and finally place the crème fraîche on top in small dots. Put everything in the oven and cook for about 30 minutes. An aromatic soup from the oven! Alternative to the classic stewed cucumber 🙂
