Lemon Aioli

Ingredients for 4 servings:

  • 50 ml milk
  • 100 ml sunflower oil
  • 1 lemon(s) (organic)
  • 2 cups yogurt, Greek
  • 1 pinch of sea salt
  • 1 clove(s) garlic

Instructions

as a dip for white bread, fish dishes, tortilla… perfect for grilling

Squeeze the lemon and reduce the juice in a saucepan until it thickens and reduces to a minimum. Finely chop the garlic clove and add it to a measuring jug with the milk. Now blend both ingredients with a hand blender, gradually adding the oil. Blend until the aioli reaches a mayonnaise-like consistency. Mix the Greek yogurt with the reduced lemon juice and the aioli. Season to taste with sea salt and fresh lemon zest. If the lemon flavor is too intense, you can reduce it with a little honey. We like to eat the aioli with Spanish tortilla or simply with delicious white bread and salad. It’s also perfect as a dip for barbecues. A fresh, summery version of the beloved, classic aioli.
