Ingredients for 4 servings:
- 1 kg potatoes, early, small
- 1 organic lemon(s), the juice
- 5 tbsp olive oil
- 1 tsp caraway seeds
- 5 stalks of thyme
- Pepper, freshly ground
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 30 minutes
Thoroughly scrub the potatoes with their skins off and place them in a large, shallow roasting pan. Drizzle with olive oil, lemon juice, and seasonings and let them marinate for 30 minutes. Then cook in the oven at 200°C (top/bottom heat) for 50 minutes.
