Lemon balm jam

Ingredients for 1 servings:

  • 1 kg lemon(s), untreated
  • 1 handful of lemon balm leaves
  • 1 kg gelling sugar 1:1
  • 1 packet of vanilla sugar
  • Water

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 13 hours 35 minutes

Thinly slice the lemons. Remove the pips. Place the lemon slices in a pot and cover with water. Let them steep overnight. The next day, simmer everything for about an hour, until the lemon slices break down. Chop the lemon balm. Add the gelling sugar and lemon balm and bring to a boil while stirring. Simmer for four minutes, then pour into jars and seal. The jam also makes a great gift.
