Bake lemon cake with oil

Lemon cake is a popular dessert that is traditionally baked with butter. However, you can also prepare the cake with oil and a little orange juice to create a particularly juicy version. You need the following ingredients: 200 ml vegetable oil, 2 organic lemons, 300 g flour, 4 eggs, 150 g sugar, 1 sachet of baking powder, 1 sachet of vanilla sugar, 200 ml orange juice, salt, and 200 g powdered sugar.

  1. Preheat the oven to 180 degrees top/bottom heat and grease a loaf tin for the cake.
  2. Wash the lemons, grate the zest and squeeze out the juice.
  3. Now beat the eggs with the sugar and vanilla sugar until fluffy.
  4. Mix the oil with 6 tablespoons of lemon juice and the orange juice and stir into the batter.
  5. Mix the salt and baking powder with the flour and add the grated lemon zest. Mix everything with the batter.
  6. Now put the lemon cake batter in the mold and leave it in the oven for 50 to 60 minutes. It should then cool down before you knock it out of the mold.
  7. Mix the icing sugar and 4 tablespoons of lemon juice with a whisk so that there are no lumps and spread the glaze on the cake.
