Ingredients for 4 servings:

  • 4 chicken breasts
  • olive oil
  • lemon juice
  • salt and pepper
  • 2 sprigs rosemary
  • 12 potatoes, floury
  • 5 cloves garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the chicken breasts in a baking dish, mix equal parts olive oil and lemon juice, and blend with a hand blender until creamy. Season with salt and pepper to taste. Peel the garlic cloves and add them to the dish with the chicken. Wash the potatoes with their skins on and slice them. Add them to the baking dish. Finally, drizzle the olive oil and lemon juice over the dish (the meat and potatoes should be covered) and add one or two rosemary sprigs. Bake in the oven at 180-200°C for about 1 hour. The dish is ready when the potatoes are tender.
