Ingredients for 6 servings:
- 50 g butter
- 1 cup sugar
- 4 eggs, separated
- Flour, 1/3 cup
- 1 tsp baking powder
- 3 lemon(s), the grated peel of two and the juice
- 1 ½ cup(s) milk

Delicious lemon pudding
Preheat oven to 160°C. Beat butter with half the sugar and the lemon zest until creamy. Add egg yolks, flour, baking powder, lemon juice, and milk and continue beating. Beat egg whites until stiff peaks form, add the remaining sugar, and continue beating until the mixture is glossy. Fold the egg white mixture into the egg yolk mixture and transfer to an ovenproof dish. Place the dish in a water bath in the oven and bake for about 50 minutes, until light golden brown. The clue is that a soufflé-like sponge layer will rise during baking. A delicious, light lemon sauce will then form underneath. Tip: It’s often served with vanilla ice cream.
