Ingredients for 4 servings:
- 2 egg yolks
- 150 ml oil
- 1 tbsp mustard, medium hot
- 2 tbsp lemon juice
- 2 cloves garlic
- 1 tsp lemon zest
- 1 pinch of cayenne pepper
- 1 pinch(s) of sugar
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Whisk the egg yolks with the vegetable oil, mustard, and lemon juice in a bowl to make mayonnaise. Peel and finely dice the garlic. Mix the mayonnaise with the lemon zest (grated from an unwaxed lemon) and the garlic. Season to taste with sugar, cayenne pepper, salt, and pepper.
