Ingredients for 48 servings:
- 200 g butter
- 1 egg yolk
- 275 g powdered sugar
- 300 g flour
- 2 tbsp lemon(s), zest, grated, untreated
- 2 tbsp lemon juice
- 2 tbsp pistachios, chopped
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 40 minutes
Cream together butter, egg yolks, and 125g powdered sugar. Knead in flour, lemon zest, and 1 tablespoon of lemon juice. Chill for 60 minutes. Preheat oven to 150°C (top/bottom heat). Shape the dough into rings and place them on a prepared baking sheet. Bake in the preheated oven for about 15 minutes. For the glaze, combine the remaining powdered sugar with the lemon juice and brush over the rings. Sprinkle with the chopped pistachios.
