Ingredients for 4 servings:
- 8 slices of toast (preferably from the day before)
- 125g mozzarella
- 2 eggs
- 3 tbsp milk
- 1 tbsp Parmesan, grated
- 4 tbsp olive oil
- 4 tbsp butter
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Baked mozzarella
Cut the crusts off the slices of bread. Slice the mozzarella and top 4 slices with them. Season with salt and pepper and place the remaining 4 slices on top. Whisk together the eggs, milk, and Parmesan cheese. Dip the edges of the bread into the mixture, pressing them together. Place the bread in a shallow dish and pour the remaining egg and milk mixture over the bread, allowing it to soak in. Turn the bread several times. Heat oil and butter in a pan and fry the bread for 1-2 minutes on each side until golden brown and crispy. Serve hot.
