Ingredients for 4 servings:

  • 400 ml water
  • 400 g sugar, white
  • 8 lemons (organic)

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 5 minutes; Total time approx. 4 hours 20 minutes

without protein

Heat the water in a saucepan and stir in the sugar. Boil over medium heat for about 5 minutes. Meanwhile, carefully peel the zest from two lemons (not too thickly, otherwise it will be bitter). Add the zest to the syrup, then squeeze all the lemons (you should get about 300 ml of juice). Remove the pan from the heat, add the lemon juice, stir, and let cool. Then, without the zest, mash it in an ice cream maker until sorbet is obtained.
