Ingredients for 1 servings:

  • 150 g flour
  • 100 g butter
  • 50 g sugar
  • 2 egg yolks
  • 1 egg white
  • 100 g sugar
  • 1 lemon(s), juice
  • 2 lemons, zest grated
  • 40 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Lemon tart

Knead the sugar, butter, and flour into a dough, wrap in cling film, and chill for 30 minutes. Then roll out as thinly as possible (preferably between two layers of cling film), place in the buttered tart tin, and prick several times with a fork. Bake for about 30 minutes at 150°C. For the topping, combine the sugar, egg yolks, and egg whites in a saucepan and heat. Add the lemon juice and zest, and remove from the heat. Melt the butter separately, add it to the lemon mixture, and mix everything well. Heat again if necessary; the mixture needs to be nice and thick! Pour the mixture onto the baked base and bake for another 30 minutes at 150°C. The cake will have a wonderful orange-golden brown color and taste simply fantastic – guaranteed! Note: I personally like the topping a little thicker, so I make double the amount and then put about two-thirds of it on the cake; the rest can be eaten as is.
