Lemon Timbale

Ingredients for 4 servings:

  • 3 egg whites
  • 150 g quark (low-fat quark)
  • 250 ml milk (skimmed milk)
  • 40 g sugar
  • 30 g Gelfix (instant gelatin)
  • 100 ml lemon juice
  • 10 g lemon(s) peel
  • Mint (lemon mint) for decoration

light and fluffy lemon dessert without cream

Beat the egg whites until stiff and set aside. Whisk the quark with the milk and lemon juice until smooth. Mix the sugar, gelfix, and lemon zest and add to the other ingredients, stirring constantly. Finally, gently but thoroughly fold in the beaten egg whites. Pour into timbale molds and chill for about 2-3 hours before serving. Garnish with lemon mint. Serve with a fruit sauce made from pureed strawberries or raspberries. Variation: Simply replace the lemons with oranges. If you’d like to refine the mixture with a dash of lemon liqueur, simply use the same amount less milk.
