Lenchen's farmer's omelet

Ingredients for 2 servings:

  • 1 sausage (Kaminwurzen or Landjäger)
  • 200 g mixed ham and bacon
  • 1 zucchini
  • 1 bell pepper
  • 1 m.-sized onion(s)
  • 6 eggs
  • 100 ml milk
  • salt and pepper
  • some chives
  • some fat, for frying

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

For the omelet, first dice the onion and slice the Kaminwurzen or Landjäger sausage. Dice the ham and bacon. Fry everything together in a pan with a little fat until crispy. In the meantime, chop the vegetables. You can, of course, replace the zucchini and peppers with other vegetables. When the sausage is crispy in the pan, add the chopped vegetables. Fry everything again well. Whisk the eggs with the milk, seasonings, and finely chopped chives in a bowl. Then pour over the contents of the pan and let it set. Once set, flip. Let the omelet brown briefly, then remove from the pan and serve.
