Ingredients for 2 servings:
- 100 g lentils, red
- 1 small zucchini, grated
- 1 chili pepper(s), red, chopped
- 2 tbsp sesame seeds
- 1 tbsp coriander greens, fresh, chopped
- 1 egg(s)
- 50 g flour
- Olive oil for frying
- Vegetable oil for frying or deep-frying
- e.g. paprika powder or curry powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the lentils uncovered in boiling water for about 10 minutes until tender. Then drain in a sieve to remove any excess water. Fry the grated zucchini with the chili pepper in the olive oil until tender, then mix with the lentils and coriander. Whisk the egg and knead it into the vegetable mixture along with the flour – you should be able to form balls with wet hands or two teaspoons. If necessary, add a little more flour or cornstarch. Season with paprika or curry powder, using a generous amount. Form the mixture into about 12 balls and either fry them in plenty of vegetable oil until crispy all over (but this won’t result in perfectly round balls) or deep-fry them. The lentil balls make a delicious and light meal with a salad. They can also be served as a starter or as a side dish, for example, with baked vegetables or oriental and Indian dishes.
