Lettuce with red peppers

Ingredients for 2 servings:

  • 1 head of lettuce
  • ½ bell pepper(s), red
  • 2 tbsp balsamic vinegar, light vegan
  • 3 tbsp rapeseed oil
  • 1 tsp mustard, medium hot
  • some sugar to taste
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the lettuce, wash it thoroughly, and drain well. Wash the bell pepper, remove the seeds, and cut it into thin strips. For the dressing, whisk the balsamic vinegar with mustard, pepper, salt, and a little sugar until creamy. Whisk in the oil. Tear the lettuce into bite-sized pieces and toss it with the bell pepper and the dressing. Serve the salad quickly after preparation so it doesn’t wilt.
