Light But Very Spicy Potato Salad

The perfect light but very spicy potato salad recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes
  • 300 g Skyr natural
  • 2 Gherkins
  • Cucumber water
  • 1 tbsp Honey mustard
  • 1 Shallot
  • 2 Garlic cloves
  • Espelette pepper
  • Salt
  1. Boil the potatoes as jacket potatoes in sufficiently salted water, drain and allow to cool a little. Then peel and cut into slices.
  2. Put the skyr with the mustard and some cucumber water in a bowl and stir until smooth. Now season well with Espelette pepper, pepper and salt. Finely rub in the two cloves of garlic and mix well. Finely dice the shallot and the pickled cucumbers and also add and mix. Now add the potato slices and mix and let steep for at least 2 hours.
  3. Since Skyr has a very low fat content between 0.2 and 0.5 percent, this is a very light and very digestible salad.
