Spicy, Hearty Potato Salad
The perfect spicy, hearty potato salad recipe with a picture and simple step-by-step instructions.
- 600 g Jacket potatoes
- 1 piece Finely diced onion
- 4 piece Gherkins gherkins finely diced
- 1 disc Wild boar bacon finely diced
- 2 tbsp White balsamic vinegar
- 2 tbsp Cold-Pressed sunflower oil
- 250 ml Homemade meat broth
- 1 pinch Sugar
- 1 pinch Sea salt fine
- 1 pinch White milled pepper
- 1 pinch Black pepper from the mill
- 1 tbsp Mustard extra hot
- 1 some Lard
- Peel the potatoes (waxy) while they are still warm and cut into slices.
- In the time when the potatoes are cooking, the bacon is fried crispy in pork lard, the rind of the smoked wild boar bacon (I get it from a hunter friend) I fry and then dispose of it.
- Now add the onion cubes and steam them for a few minutes. I also add some sugar to the pan (at the end). Finally, I pour on the broth and mix it with the bacon and onions.
- Now pour the pan mixture over the potato slices, mix gently and leave to stand for 30 minutes.
- Mix the vinegar, oil, mustard and gherkins together and when the 30 minutes are up, add to the salad. Mix everything well and season with salt and pepper.
- Let the potato salad steep for another 30 minutes and serve with homemade brawn. A cooking friend made the brawn and made it available to me to test. Everything was very delicious. A fine dinner.
