Ingredients for 1 servings:
- 2 tbsp, heaped cream cheese, low-fat
- 1 tbsp light cream
- 1 tbsp organic yogurt, 1.5% fat
- 1 ½ tsp chives
- ½ small cucumber(s) or 1/4 normal sized
- salt and pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Mix the first four ingredients together thoroughly. Peel the cucumber, then slice and chop into small pieces, and stir into the cream cheese mixture. Season to taste with salt and pepper. Great for grilling. It also makes a great dip for boiled potatoes or vegetable sticks, and is also delicious with crackers, though be careful with the salt.
