Ingredients for 1 servings:
- 200 ml rapeseed oil
- 3 tbsp lemon(s) (the juice)
- 1 egg(s)
- 2 tbsp mustard, medium hot (Dijon)
- ½ tsp sea salt
- 1 tsp sugar
- ½ tsp white pepper
- e.g. herbs (parsley, dill, chives, garlic or similar)

very easy to make mayo with the “magic wand”
To make this quick mayo, you need a hand blender and a cylindrical container that’s only slightly larger in diameter than the blade of the blender. Add the rapeseed oil, lemon, egg, mustard, salt, pepper, and sugar to the container. Now lower the blender to the bottom of the container, turn it on to full power, and slowly pull it upwards. The mayo is basically ready. If desired, season with salt, pepper, and sugar to your liking and save it for your future “tailor-made” recipe. You can also spice up the mayo with herbs, such as dill for fried fish or chives for sauerkraut. Your imagination is almost limitless. I personally like to add a little finely chopped garlic. The herbs are simply added to the liquid before using the blender. Gone are the days of endless stirring and adding oil drop by drop… WONDERFUL!
