Lightning-fast polenta

Ingredients for 1 servings:

  • 200 ml water, hot
  • 50 ml milk
  • 70 g corn semolina, fine
  • salt and pepper
  • nutmeg
  • 1 tsp butter
  • 3 tbsp cheese, grated

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

from the microwave

Combine hot water and milk in a microwave-safe bowl. Weigh the polenta, stir it into the milk, a little salt, pepper, and nutmeg, and let it stand for about 2 minutes. Bring everything to a boil in the microwave on full power for about 2-3 minutes. Carefully(!) remove the bowl using potholders and immediately stir the polenta with a fork. Stir in the butter and grated cheese one at a time and continue stirring for about 2 minutes until the polenta thickens. If desired, you can add more milk to make it creamier. Season to taste with salt, pepper, and nutmeg.
