Lime buttermilk mousse

Ingredients for 4 servings:

  • 2 eggs
  • 50 g sugar
  • 1 tsp lime zest, finely grated from an organic lime
  • 4 tbsp lime juice
  • 400 ml buttermilk
  • 3 sheets of gelatin

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 10 minutes

Light and delicious

Soak the gelatin in cold water for 10 minutes. Beat the eggs, lime zest and juice, and sugar in a double boiler until frothy. Add the gelatin to the hot egg mixture and dissolve. Stir in the buttermilk. Chill the mousse and stir vigorously again as soon as it begins to set. Pour into dessert bowls and chill for at least 5 hours, preferably overnight. Variations: orange, blood orange, or grapefruit.
