Ingredients for 1 servings:

  • 2 limes, untreated
  • 250 g wheat flour
  • 80 g powdered sugar
  • ½ tsp baking powder
  • 120 g butter, soft
  • 1 egg yolk
  • 150 g powdered sugar

Instructions

Working time approx. 50 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours

Rinse the limes, dry them, and finely grate the zest. Then juice the limes. Knead the lime zest and half of the juice with the flour, powdered sugar, baking powder, butter, and egg yolk. Chill the dough for 2 hours. Then roll out the dough to a thickness of 3 mm and cut out stars or shamrocks. Bake the cookies in a preheated oven at 180°C for 8-10 minutes until light golden, then let cool. Glaze the powdered sugar and the remaining lime juice and brush over the cookies. This makes approximately 40 very fruity, fresh cookies.
