Limoncello with vodka

Ingredients for 1 servings:

  • 6 lemons (organic)
  • 250 g sugar
  • 1 bottle of vodka (700 ml)

Instructions

Working time approx. 20 minutes; Rest period approx. 10 days; Cooking/baking time approx. 30 minutes; Total time approx. 10 days 50 minutes

Rinse the lemons under hot water and dry. Then peel off only the yellow part of the lemon zest with a vegetable peeler, making sure that none of the white remains on the zest, otherwise the liqueur will later become bitter. Squeeze out the lemon juice and set aside. In a saucepan, add 200 ml of water, the lemon zest, and the sugar, and bring to a boil until the sugar has dissolved. Reduce the heat and simmer for 15 minutes. Pour in the lemon juice and let the syrup simmer for another 5 minutes. Remove the pan from the heat and let the drink cool. Pour the vodka into a sterile preserving jar, add the lemon syrup and lemon zest. Close the jar tightly and shake vigorously. Let the lemon vodka steep in a cool, dark place for 7-10 days, shaking vigorously once a day. After the steeping time, strain the liqueur through a sieve and bottle. This makes 2 bottles of 0.75 l each. Over time, the syrup may separate from the vodka, but that’s normal. Just shake vigorously, and it will mix again.
