Ingredients for 1 servings:

  • 50 g butter
  • 250 g quark (quark or Brimsen)
  • ½ onion(s), very finely chopped
  • 50 g gherkins, very finely chopped
  • 1 ½ tbsp paprika powder, sweet
  • 1 tsp mustard
  • 1 tsp anchovy paste, optional
  • 1 tsp tomato paste, optional
  • 1 tsp capers, chopped, optional
  • 1 tsp chives, optional
  • 1 pinch of chili powder, optional
  • 1 pepper, pickled, very finely chopped, optional
  • ½ garlic clove(s), optional
  • salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

hearty Austrian spread

Mix the butter and curd cheese thoroughly (no lumps should remain in the mixture). Add the finely chopped onion, pickles, and mustard, and mix everything thoroughly. Now gradually add the paprika powder until the mixture is a beautiful orange color. The optional ingredients can be added according to personal taste. Season to taste. The “original” Liptauer is made in Austria with Brimsen (a fresh cheese made from sheep’s milk). Since it’s not always available, curd cheese is usually used. Liptauer is a traditional spread available at any Heurigen (wine tavern), although each Heurigen has its own recipe. It tastes great with pretzels, black bread, and as a dip for savory pastries and pretzel sticks.
