Ingredients for 1 servings:
- 300 g low-fat curd cheese
- 4 eggs (size L)
- 100 g ground almonds
- 100 g flaxseed, crushed
- 4 tbsp oat bran or wheat bran
- 2 tsp guar gum
- 1 packet of baking powder
- 1 tsp, leveled salt
- 1 tbsp sunflower seeds for sprinkling

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
Low-carb bread
Preheat the oven to 150°C (fan/convection oven). Line a loaf pan with baking paper. Combine all ingredients in a mixing bowl and whisk. Pour the batter into the pan, smooth it out, and bake on the middle rack for about 40 minutes. (Use a toothpick to test.) Sprinkle with sunflower seeds, if desired. Note from Chefkoch.de: Because flaxseed contains a relatively high amount of cadmium, the German Federal Center for Nutrition recommends consuming no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
