Loin in pepper cream sauce

Ingredients for 3 servings:

  • 1 large pork loin(s)
  • some spice mix (steak seasoning)
  • 125 g ham, diced
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 tbsp peppercorns, green
  • 2 cups of cream
  • 1 tbsp mustard
  • 1 tbsp tomato paste
  • 5 juniper berries
  • 1 bay leaf
  • some soup powder
  • Sauce thickener

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the loin into 2 cm thick slices and season. Brown well in hot fat and remove from the pan. Add the finely chopped onion, garlic clove, and diced ham to the pan and sauté until translucent. Sauté with the tomato paste and deglaze with the cream. Add the mustard, peppercorns, juniper berries, and bay leaf, and season with a little soup powder. Return the loin to the pan and braise for about 20 minutes. Then thicken with a sauce thickener, if desired. Serve with spaetzle or fries.
