Ingredients for 1 servings:

  • 6 eggs, size M
  • 180 g brown sugar
  • 2 tbsp honey, liquid
  • 2 tsp cinnamon powder
  • 1 tsp gingerbread spice
  • 1 pinch of salt
  • 250 g almonds, ground
  • 250 g hazelnuts, ground
  • 200 g candied orange peel, chopped in a blender
  • 200 g candied lemon peel, chopped in a blender
  • n. B. Wafers, 70 or 90 mm diameter
  • 200 g chocolate coating

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Christmas neighborhood recipe

Beat the eggs, sugar, and honey with a hand mixer for about 5 minutes until frothy. Mix in the remaining batter ingredients. Spread the batter evenly onto the wafers (makes about 30 wafers/90 mm or about 40 wafers/70 mm). Place on a baking sheet lined with baking paper. Bake in a preheated oven at 150°C (top/bottom heat) for about 20 minutes. Once cooled, cover with chocolate coating, if desired.
