  • 200 g potatoes, boiled, from the jar
  • 80 g quark, low-fat
  • Oil (sunflower oil) for frying
  • Applesauce (e.g. Natreen) or fresh fruit
  • Cinnamon

Since I love Quarkkeulchen so much, but eggs and flour are always very high in calories, I decided to try something new. They come in a jar of potatoes. They’re already peeled and cooked (also handy for potato salad or fried potatoes). I grated these potatoes with a regular grater and then mixed them with a little quark (0.2% fat). I’m not entirely sure about the amount. You have to do it by feel. It can’t be too much, otherwise the dough will be too mushy. I omitted the flour and eggs just for the sake of experimentation, and it worked. So, add a little sunflower oil to a non-stick pan, heat it up, and form the dough into small balls, which you then flatten slightly in the pan. The smaller the Quarkkeulchen are, the easier they are to turn. Let the Quarkkeulchen sizzle well so they get a nice crust and are easy to turn. It takes a little longer with less oil, but it works. If they do stick to the pan, sprinkle the next batch with a little whole-wheat flour. The taste test was convincing; I noticed no difference other than a slightly lighter consistency. This dish pairs well with applesauce (Natreen) or fresh fruit (apple, orange, banana, etc.). Add a little cinnamon and the delicious dish is perfect. Nutritional information is based on oil, one apple, and 100g of applesauce.
