Ingredients for 1 servings:

  • 1 tbsp light mayonnaise
  • 4 tbsp natural yogurt 1.5%
  • 2 tbsp gherkins (finely chopped)
  • 1 tbsp capers (finely chopped)
  • 1 tsp peppercorns, green pickled or more
  • 1 tsp, heaped Dijon mustard
  • 1 tbsp herbs, frozen or fresh
  • e.g. salt and pepper
  • 1 shot of cucumber juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

in summer with fresh herbs, otherwise from the freezer

Combine the light mayonnaise and yogurt in a large bowl, along with the mustard. Add the gherkins, pickled green peppercorns, capers, and finely chopped herbs (e.g., parsley, dill, or basil) as desired. Whisk until smooth. Season with salt and pepper, if desired. A little of the pickle juice will give the sauce an even more rounded texture. Now pour into a jar; it will keep in the refrigerator for about 14 days.
