Low-calorie spinach dish with ham and chickpeas

Ingredients for 1 servings:

  • 1 onion(s)
  • 1 tsp rapeseed oil
  • 1 tsp curry powder
  • 100 g chickpeas
  • 100 g spinach
  • 1 tsp vegetable broth
  • 100 ml water
  • 2 cocktail tomatoes
  • 20 g cooked ham
  • 30 g cream cheese
  • 1 pinch(s) of pepper
  • 1 tbsp soy sauce
  • 1 slice(s) wholemeal bread

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel and dice the onions, and sauté them in a pan with rapeseed or olive oil. Add the curry powder. Drain the chickpeas and add them, along with the spinach, vegetable stock, and water. Halve the cherry tomatoes, finely chop the ham, and stir in the cream cheese. Simmer for a few minutes, then season with soy sauce and pepper. Serve with a slice of whole-grain bread.
