Ingredients for 1 servings:
- 130 g almonds, ground
- 100 g butter
- 2 tbsp Stevia
- 2 egg yolks
- 1 tsp, leveled baking powder

without flour and sugar
Combine all ingredients in a mixing bowl to form a dough, then chill for about 1 hour until firm. Preheat the oven to 160°C (top/bottom heat) and line a baking sheet with parchment paper. Roll the dough into a log. Cut this into 1-2 cm thick slices and form croissants. Bake in the hot oven for about 10 minutes. Note: If desired, you can garnish or decorate the croissants with a little dark chocolate. This recipe makes about 20 croissants.
