Low carb avocado lime dessert

Ingredients for 4 servings:

  • ½ avocado(s)
  • 1 lime(s), juice
  • e.g. erythritol (sugar substitute) or sugar
  • 200 g sour cream
  • 100 g low-fat curd cheese
  • 1 bag of jelly, lemon flavor
  • 20 g almonds, ground
  • 20 g almonds, chopped
  • 10 g chia seeds

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Hollow out half an avocado and puree it with the juice of one lime. Mix the sour cream and low-fat quark with erythritol or a similar sweetener until creamy. Add the avocado cream to the quark mixture. Prepare the jelly according to the package instructions, but only use 200 ml of water. Let it cool slightly and stir it into the quark mixture. Add the chopped and ground almonds and the chia seeds to the very liquid mixture. Let it sit for about 15 minutes, stir the mixture again and sweeten again if desired, or if you prefer it more tart, add a little more lime juice. Pour into silicone molds or dessert glasses and let it set in the refrigerator. To serve, drizzle with melted chocolate or serve with fresh fruit. Note: Due to the high fat content, this is enough for 4 servings.
