Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 6 small eggs
  • 1 tsp, leveled salt
  • 1 pack of baking soda
  • 1 tbsp rapeseed oil
  • 1 carrot(s), grated
  • e.g. nuts or sesame, linseed or oat flakes
  • 7 tbsp psyllium husks
  • some lemon juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Protein bomb

Mix the quark, eggs, salt, baking soda, rapeseed oil, carrots, and nuts until smooth. I add 20-50 g of nuts, sesame seeds, flax seeds, or oats to the batter. You can vary this as you like. Finally, fold in the psyllium husks. Pour the batter into a loaf pan lined with baking paper and bake at 160°C (convection oven) for about 50 minutes. Slice after cooling. Since the bread will be very moist, I recommend toasting each slice in a toaster before eating. You can also omit the carrots. Nutritional values: Fat: 52.3 g; Carbohydrates: 59.2 g; Protein: 117.7 g
