Ingredients for 1 servings:

  • 100 g soy flour
  • 100 g wholemeal spelt flour
  • 100 g oat flakes
  • 60 g flaxseed
  • 20 g psyllium husks
  • 35 g chia seeds
  • 150 g sunflower seeds
  • 1 ½ tsp salt
  • 3 tbsp olive oil
  • 400 ml water
  • 1 tsp blossom honey, optional
  • 2 tbsp sourdough, optional

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 6 hours 45 minutes

Vegan and vegetarian versions – without eggs

Mix all ingredients thoroughly and let rest in a greased loaf pan overnight (at least 5 hours). Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for 40 minutes. Carefully remove from the pan and bake on a baking sheet for another 35 minutes. Let cool on a wire rack.
