Ingredients for 1 servings:
- 300 g low-fat curd cheese
- 3 large eggs
- 80 g flaxseed flour
- 20 g flaxseed meal
- 100 g gluten
- 4 tbsp quinoa
- 2 tbsp soy flour
- ½ tsp salt
- 1 packet of dry yeast
- 100 ml water, lukewarm
- ½ tsp instant broth
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 5 minutes
Mix the quark with the eggs. Mix lukewarm water with the broth, then dissolve the yeast in the broth. Add all the dry ingredients to the quark and egg dough and mix. Finally, stir in the yeast broth. Let it rest in a warm place for 1 hour. Knead again and let it rest for another hour. In the meantime, preheat the oven to 180°C (top/bottom heat). Bake the dough in a loaf pan for approximately 40-50 minutes.
