Ingredients for 1 servings:
- 225 g gluten (wheat gluten)
- 25 g sweet lupin flour
- 15 g fine oat flakes
- 15 g flaxseed, crushed
- 20 g poppy seeds
- 5 g dry yeast
- 360 ml water
Instructions
Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 25 minutes
Protein bread
Combine the dry ingredients. Add the lukewarm water and briefly knead everything with your hands until it forms a rubbery dough. Let the dough rise in a warm place for 25 minutes. Knead briefly and lightly again and let it rest for another few minutes. Preheat the oven to 170°C. Form the dough into a ball, place it on a baking sheet, and bake the bread on the lowest rack at 170°C fan oven for about 35 minutes.
