Low-carb bread without gluten, yeast and milk

Ingredients for 1 servings:

  • 120 g almond flour
  • 80 g flaxseed flour
  • 1 tbsp golden flaxseed
  • 1 tbsp flaxseed meal
  • 2 tbsp psyllium husks
  • 1 tsp salt
  • 1 ½ tbsp sunflower seeds and a few seeds for sprinkling
  • 1 ½ tbsp pumpkin seeds
  • 2 tbsp walnuts, chopped
  • 1 tsp baking soda
  • 1 tsp cream of tartar baking powder
  • 3 egg whites
  • 75 ml apple cider vinegar
  • 300 ml water, warm

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 2 hours 5 minutes

First, combine all the dry ingredients, then add the egg whites, apple cider vinegar, and water and mix thoroughly. If you don’t have almond or flaxseed flour, you can substitute it with plain egg white powder. Pour the batter into a greased silicone loaf pan and sprinkle with sunflower seeds. Bake at 170°C (350°F) for about 110 minutes. It’s best to place an ovenproof bowl of water in the oven with the loaf, as this will help create a nicer crust.
