Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 100 g oat bran
  • 100 g protein powder
  • 100 g flaxseed, whole or crushed
  • 50 g sunflower seeds
  • 4 eggs
  • 2 tsp baking powder
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 25 minutes

Mix the baking powder with salt and egg white powder. Add the remaining ingredients and mix thoroughly with a whisk or hand mixer. It’s important that the ingredients are thoroughly blended and the dough has a sticky consistency. Line a 25 cm loaf pan with baking paper. Add the bread mixture. Bake for about 75 minutes at approximately 150 degrees Celsius (300 degrees Fahrenheit). These ingredients yield approximately 930 grams of bread. Note from Chefkoch.de: Because flaxseed contains a relatively high cadmium content, the German Federal Center for Nutrition recommends consuming no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
