Ingredients for 1 servings:
- 100 g frozen fruit, e.g. strawberries, raspberries, mango
- 100 ml juice or water
- 1 egg white
- Stevia, sweetener, etc.
- 2 g xanthan gum
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Puree the frozen fruit and liquid in a blender. Whisk the egg whites until stiff peaks form. Using a hand mixer, beat the fruit with the egg whites, sweetener, and xanthan gum for about 2 minutes until creamy. You can also omit the xanthan gum, but it won’t be quite as creamy. I like to eat this fluff in the evening or as a snack.
