Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 4 eggs, size M
- 60 g erythritol (sugar substitute), if you like it sweeter, use more
- 25 g protein powder (pea protein)
- 5 g baking powder
- 15 g chia seeds
- 1 organic lemon(s), zest
- 1 organic orange(s), zest
- 25 g extra virgin olive oil, or rapeseed or sunflower oil
- 1 pinch of salt
- Margarine for the mold
- Coconut flour for the mold
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour

Wash and dry the orange and lemon thoroughly. Grate the zest and place it in a bowl. Add all the other ingredients and mix thoroughly. Grease the dish with margarine, sprinkle with coconut flour, and pour the quark mixture into the dish. Smooth it out. Place the cake on top of the gas stove on the lowest heat. Increase the heat to high and bake for 5 minutes, then reduce the heat to half and bake for another 45 minutes. Then bake for another 5 minutes on high. Tip: The cake can also be baked in the normal oven at around 175 degrees Celsius for 50-60 minutes. If necessary, cover the dish with aluminum foil towards the end of the baking time to prevent it from getting too dark.
