Low-carb tuna meatballs

Ingredients for 4 servings:

  • 4 cans of tuna in its own juice
  • 1 small jar of capers
  • 5 tbsp, heaped low-fat curd cheese
  • 1 onion(s)
  • salt and pepper
  • Herbs of your choice, e.g. dill, thyme, tarragon
  • some oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Drain the tuna thoroughly. I do this in a sieve lined with kitchen towels. Combine the tuna with all the other ingredients and season with the spices and herbs. Form the batter into meatballs. The batter will be quite moist, but will firm up when baked. Heat oil in a pan and fry the meatballs until browned on both sides. We serve it with cucumber salad and homemade lemon mustard dip, consisting of herb curd, mustard, lemon juice, pepper, and salt. This recipe is gluten-free and low-carb.
