Low-carb turkey and vegetable casserole

Ingredients for 6 servings:

  • 600 g turkey strips from the butcher
  • 1 kg vegetables (Kaisergemüse), frozen
  • 1 onion(s)
  • 500 g creamed spinach
  • 100 ml milk
  • 2 tbsp cream cheese
  • 2 feta cheeses
  • salt and pepper
  • vegetable broth
  • 100 g bacon

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sear the turkey, then add the bacon to the pan and sear it as well. Heat the Kaisergemüse (fresh vegetables are fine too, but this will increase the preparation time) in a pot with hot vegetable stock for about 3-5 minutes. Chop the onion. Place the meat, vegetables, and onion in a casserole dish and bake in a preheated oven at 180°C for about 15 minutes. Then heat the creamed spinach in the pot, add 100 ml of milk, the cream cheese, and about 1/3 of the feta. Season the spinach well and bring to a boil briefly. After 15 minutes, pour the warm spinach over the vegetables and meat in the oven and bake for another 10 minutes. After these 10 minutes, spread the finely chopped feta in the casserole dish and bake for another 5 minutes. Then let it cool briefly.
