Mediterranean casserole with Kritharaki noodles

Ingredients for 4 servings:

  • 400 g chicken
  • 2 zucchinis
  • some tomatoes
  • a few garlic cloves
  • 2 onions
  • 1 pack of diced ham
  • 1 pack of feta cheese
  • salt and pepper
  • 2 tbsp parsley
  • 1 tbsp chives
  • chili powder
  • Paprika powder
  • some olive oil
  • ½ bunch of spring onions
  • 2 bell peppers
  • 250 g Kritharaki (rice-shaped noodles)
  • vegetable broth
  • Soy sauce

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Chop the chicken into small pieces, rub with soy sauce and spices (except salt), and marinate. Clean all vegetables and cut into cubes or slices. Cook the pasta according to the package instructions. In a large pan, fry the vegetables and ham in a little oil, season, mix in the chopped herbs, and transfer to a baking dish. Brown the meat and add to the baking dish along with the cooked pasta. Season well and add a little vegetable stock. Place the feta slices on top. Bake in a preheated oven at 200°C for about 30 minutes, until the cheese is lightly browned.
