Low-Carb Zucchini and Leek Vegetables

Ingredients for 1 servings:

  • 300 g zucchini
  • 80 g leek
  • some coconut oil or olive oil
  • some salt and pepper
  • 50 g smoked bacon (bundle)

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

Low-carb, easy, quick, also vegan possible

Wash the leek and zucchini. Slice the leek into rings, then halve the zucchini, including the skin if necessary. Dice the zucchini. Vegans or vegetarians can omit the zucchini. Add a little coconut oil to a pan, add the zucchini, and fry for about 1-2 minutes on medium heat. Then add the leek and zucchini and fry for another 2-3 minutes. Season with salt and pepper. If using zucchini, only a little salt is needed. This dish goes well with fish, meat, or even just potatoes.
