Ingredients for 1 servings:
- 1 large carrot(s)
- 1 garlic clove(s)
- ¼ tsp ginger, peeled, grated
- some chili pepper(s) without seeds, amount depending on spiciness and taste
- 1 tbsp tahini
- ½ tbsp lime juice
- some extra virgin olive oil
- 1 tbsp water
- 1 tsp, heaped parsley leaves, flat
- 1 tsp, heaped coriander leaves
- salt and pepper
- cumin
- 1 tsp sesame seeds, roasted
- 1 tsp pine nuts, roasted
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes
Peel the carrot and cut it into thin strips using a spiralizer. Peel the garlic and finely dice it, and very finely dice the chili. Sauté the vegetables in a little olive oil, add the tahini, lime juice, and water, and let it simmer briefly. Stir in the coarsely torn herbs, season the salad with salt, pepper, cumin, and additional lime juice, if desired. Sprinkle with sesame seeds and pine nuts and serve immediately.
