Fruity tuna curry rice salad

Ingredients for 2 servings:

  • 1 can of tuna, in water or oil
  • 1 can/n mandarin orange(s), small
  • 1 jar Miracle Whip, small
  • 1 tsp mild mustard
  • 1 tsp curry, mild
  • 1 tsp sugar
  • 3 tsp lemon juice
  • 1 bag of rice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook rice, mix Miracle Whip, mustard, curry, sugar, and lemon juice (if it’s a bit too dry afterward—the rice will still absorb the liquid—just add a little more mandarin orange juice to the dressing), add tuna and drained mandarin oranges, mix in the cooled rice, and garnish with a few reserved mandarin oranges. It’s always a hit at a buffet.
