Macaroons

- 4 Pc. Protein
- 200 g Sugar
- 1 Pc Lemon
- 280 g Desiccated coconut
- Rub the lemon peel and squeeze out the juice of the lemon. Beat the egg white until stiff, add sugar, grated lemon peel and desiccated coconut and stir in a hot water bath until the mixture is hot. Then add the lemon juice and stir vigorously. Shape small balls with wet hands, place on wafers, dust with powdered sugar and bake briefly (5-10 min) on a light top heat (about 150 degrees).
