Ingredients for 1 servings:
- 350 g spelt flour type 630
- 300 g sugar
- 5 eggs
- 120 ml sunflower oil
- 180 ml lemonade
- 1 packet of baking powder
- 1 pinch of vanilla powder
- 1 pack lemon peel, grated
- 300 g powdered sugar
- 1 dash of lemon juice

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Juicy, lemony and perfect for every occasion
Beat the eggs and sugar with a mixer for five minutes until frothy. Then add the remaining ingredients and mix briefly. Spread the batter evenly on a baking sheet lined with baking paper. Bake at 200°C (top/bottom heat) for about 20 minutes. Meanwhile, mix the powdered sugar with the dash of lemon juice well. The icing should remain thick. Don’t use too much juice. Let the finished cake cool slightly and then spread the icing over it with a knife. A little tip: The cake is even better with chocolate chips on top! We also use this recipe as a cake base or for muffins. It always works!
